Traditional irons use a bimetal metal resistance temperature sensor to control the flow of the circuit, using the different coefficients of thermal expansion of the upper and lower metal sheets to control or turn off the current.
Modern new irons are equipped with thermistors inside, which are used as temperature sensors to detect the temperature change of the iron and the degree of change. Finally, the information is transmitted to the control circuit to achieve a constant temperature. The main reason for this is to prevent short circuits caused by the high temperature of the iron.
